Özet:
The objective of this research was to determine the effects of wet-aging on biochemical properties of beef related to color. Beef longissimus lumborum muscles (n = 8) were collected 3 d postmortem, sliced into 5 equal sections, and assigned to 1 of 5 aging periods (3, 7, 14, 21, and 28 d). At each respective aging period, sections were sliced into two 2.54 cm thick steaks; one steak was used to characterize 0 d display color, biochemical and metabolite differences; and the other steak was stored under simulated retail display for 6 d. Following display, the steak was used to characterize 6 d display biochemical and metabolite differences. There was a significant aging time x display time interaction for redness (a* values; P < 0.05). There were differences (P < 0.05) in biochemical properties and metabolites dependent on aging period and display day. Mitochondrial protein concentration and oxygen consumption decreased (P < 0.05) with aging period. Metabolomics analysis identified differences in carbohydrates, fatty acids, amino acids, and intermediates utilized in cellular respiration. Glycolytic metabolites glucose-6-phosphate, fructose, and amino acids increased (P < 0.05) in abundance with increases in aging period and display day. However, there was no aging time effect on NADH-dependent reductase activity. The results suggest that increased mitochondrial damage and depletion of metabolites that can generate reducing agents can decrease MRA and color stability.
